Creamy Tortellini Soup

Ingredients
  

  • 2 Bags Tortellini (Family Size)
  • 2 Qts Chicken Stock or Bone Broth
  • 1 each Large Onion (Vidalia or sweet)
  • 8 each Large Carrots
  • 5 each Stalks of Celery
  • 1 bag Baby Spinach
  • 1 cup Heavy Cream
  • 2 lb Sweet Italian Sausage

Equipment

  • 1 Crock Pot
  • 1 Cutting Board
  • 1 Cast Iron Skillet

Method
 

  1. Brown Italian Sausage in pre-heated cast iron skillet
  2. Cut carrots, onion, and celery into bite sized pieces
  3. Place browned meat and cut vegetables into the crock pot
  4. Pour in 2 qts of stock or broth and mix everything together
  5. Add in all seasonings and mix
  6. Put lid on crock pot and cook on low for 6 hours
  7. After 6 hours, add in Tortellini and cook on low for another 15 - 20 minutes
  8. Chop spinach and add into the crock pot. Mix and cook for 5 more minutes
  9. Lastly, add in heavy cream. Stir, serve, and enjoy
